How I eat what they eat?

First of all you should know, I am not a chef or a nutritionist. I am a mom of three who doesn't have time to make more than one meal a night. In my weight loss journey I have had to find ways to make dinner for all of us at once and make it low carb and plan friendly for my needs. These are not fancy meals, I am cooking while watching three kids. If you are looking for all made from scratch with ten steps or more, then these are not for you. I try to whip things up in 20 minutes or less, semi-homemade with as few ingredients as possible and still make it to the table with a chance of having a bite of the hot meal I just made.



Tonight spaghetti was on the menu and Dave was at TopGolf for work function. I had to pick up Reese and Maggie at aftercare, head to the Vet to pick up Sammy (the cat), pick up the baby at daycare and get home in time for Reese to get dressed and ready for soccer before our fantastic neighbor picked her up for me. So it was hectic, but I still have to feed them.


Ingredients:

Ground Beef

Spaghetti Noodles (for kids)

Spiralized Veggie Noodles - I chose zucchini and sweet potatoes (could use carrot)

1 can tomato paste

1 can tomato sauce (use more if you like your sauce less thick)

2 cans diced tomatoes

Also have garlic, basil, Italian seasoning and salt for taste

Salad is for the kids and I also popped a bag of frozen broccoli in the microwave for the baby and meal prep


Start with your basics, brown your meat and get the water going for the noodles. Then get all your plates ready to set and your meal prep containers if you plan to do that. After the meat has browned you will get all the cans together for your spaghetti sauce and then add the cooked ground beef then season to taste. No need to wash your non-stick pan just go ahead and put your zucchini and sweet potato noodles in, maybe add a little olive oil and let them cook just a bit. Once the noodles are done, just drain them and you will be ready to plate all the food. Total time for me on this recipe was 20 minutes.


There you go, you have your meals. I have each of the kids covered with spaghetti with noodles. I have my spaghetti dinner made with veggie noodles. I also made enough to have three lunch or dinner meal prep meals. I also have leftover noodles for the kiddos, enough sauce to put on the kids noodles and make loaded sweet potatoes and a side salad later this week if I like. It's easy, it's only one more step but take the time and make the switch. I mean you can spiralize your own noodles from veggies if you want, I just didn't have time for that. Every mom has to figure out what works for her, this is one version of me making it work for me.


It's that easy.
